Ulam Dallas and his executive chef, Anna Swann, pop up in more than just their monthly appearances at local breweries and bakeries. The Philippine pop-up was recently featured in Food & Wine magazine as the “best place to eat Filipino food” in Texas.
The article, which featured the best Filipino food in each state, called Swann’s Tipsy Pancit dish “a symbolic tour de force,” and stated that Swann is part of a “new wave of enterprising Filipinas who are using food to claim their identity and enhance their identity.” to affirm ambition, talent and business prowess.”
Swann is a second-generation Filipino American born and raised in the San Francisco Bay Area, but she moved to Texas in 2006. The dishes in her pop-ups often include Tipsy Pancit, but also arroz caldo, spring roll, adobo chicken wings, calamansi pie and Spam dishes. Swann says she is “still in disbelief” about being featured in Food & Wine. She’s seen her Instagram following grow since the article came out, and she’s heard from people across the state and country asking about her events. The next event for Ulam Dallas is July 23 at Sandwich Hag’s Anniversary Night Market.
Swann and Ulam are also part of a wave of chef-driven Filipino food here in North Texas. Ober Here, a rice bowl and spring roll restaurant owned by executive chef Mark Guatelara, recently opened in Fort Worth, and Marie’s Kitchen in Dallas, offering hearty Filipino breakfast silos with options such as pork belly, Spam, and fried sardines. Bakeries like Pandesal Place in Allen make sweet treats like caramel flan and ube pandesal, which you can also find at Plano cafe Tea Town, along with other Filipino specialties and drinks like Sago’t Gulaman. And Old Rooster Creek in Princeton always draws in crowds with lechón and other Filipino barbecue dishes.
