If the new dishes revealed for the Iowa State Fair on Tuesday had anything in common, then it didn’t have to be a stick in sight. The skewer that serves as a staple of State Fair foods ranging from fried butter to a vegetable shish kebob did not find a home among 10 of the 53 new dishes introduced before the fair.
Instead, the 10 new dishes vying for a spot among the three vying for People’s Choice for Best New Fair Food came in a cup, wrapped in a tortilla or bao roll, wrapped in a brioche roll, or tucked into an aluminum pan.
“Polls show that food is the No. 1 reason people come to the fair,” said Gary Slater, executive director and manager of the Iowa State Fair. That observation featured a panel of judges. television and local news along with DJs from radio stations, board members and volunteers from the Iowa State Fair, and even the Queen of the Iowa State Fair, McKenna Henrich), who had the difficult task of tasting 10 foods fresh and judge them based on appearance, taste, and presentation on Tuesday. The competition was tough. Three desserts, a Minty Moo parfait with Thin Mint cookies, a Puff Sundae with all the elements of s’mores, and a Blue Ribbon Cobbler, were up against more traditional fair foods. A riff on a Reuben brought a deli sandwich into the competition. A pork tenderloin came wrapped in a tortilla. Even a breakfast sandwich, the Egg-O-Fire eggs, upped the novelty factor. But the competition came down to reinvented versions of pork and chicken dishes.

OMG Chicken Sandwich: Chicken City
This chicken sandwich comes with a battered chicken breast that is then topped with sugar coated cornflakes, deep fried, and then served in a Krispy Kreme doughnut. A bit of bacon and maple syrup add to the sweetness of the dish. It comes out $12.
Pork Picnic in a Cup: Iowa Pork Tent
The $10 Pork Picnic in a Cup features layers of barbecued pulled pork, baked beans, creamy coleslaw and a drizzle of barbecue sauce, garnished with brown sugar pork belly.
The Finisher: The Rib Shack
This giant $10 plate comes with a baked potato stacked with minced brisket, smoked pulled pork, and The Rib Shack’s famous Bacon Brisket Macaroni, topped with BBQ sour cream and garlic butter. The top three fair new foods compete for the People’s Choice Best New Food award. Fairgoers can sample the top three finalists and cast their vote from August 11-15 at midnight. The winner will be announced on August 17 during the State Fair.

Last year, Cluck’n Coop’s Indian Fried Bread Chicken Egg Salad won the People’s Choice Best New Food of the 2021 Iowa State Fair.
