Customers may be saying “We Can’t Believe That Ivegan” at the new restaurant of the same name celebrated the grand opening of July at 584 W. Schrock Road in Parkview Center plaza.

Owner / Chief Clayton Freeman received a line of guests-only guests at the front door, during the quiet opening of July 8, saying, “Welcome to one 100% vegan restaurant in Westerville, Ohio – Can’t Believe It’s Vegan.”

“Our goal is to provide delicious food that answers the question: What do Vegan eat?” According to the business website, adding, “By providing a variety of diets, we seek to educate others about nutrition that is good for you and the world.”

Freeman said he and his wife, Kim, went with Vegan, as if trying to eat better.

“We started to learn more about the vegan lifestyle and how it benefits the planet,” he said. “We wanted to do better for ourselves and the world. Most people, when they think of vegan and veganism, think, well, people are doing it because they want to live to be a hundred and ninety years old. Same, no, no, no, no. I want to have a higher life than most of life. “

Freeman said the idea started as a transport project, more than three years ago, when the pair decided to find a place for brick-and-mortar.

“I always enjoyed cooking,” she says. “I always say the best teachers I had were my mom and dad.”

Pickerington’s Kim Gray was the first to try Freeman’s cooking when it was just coming.

“I will eat this food anytime and every day,” he said. “He made wonderful lettuce pages. There’s nothing I can recommend. He makes it so much fun to try.”

Gray said he is in Westerville three days a week, so he is always a customer.

Sherry Fleury of Dublin attended a simple opening to support the Freemans. He attended law school with Kim Freeman.

“I’m not a good eater, but I’m trying to change my lifestyle as I get older,” said Fleury. “I am a glutton. I am not vegan. When they started, I ordered the whole family. I ordered trays and shared them with my whole family. It was good, and none of us are vegan. “

He mentioned that Angel Hair Chick’n Pasta at this restaurant is one of his favorites, with onions, mushrooms, peppers, baby spinach, basil nyowani and garlic with pieces of chick’n, angel hair pasta and fried parmesan cheese.

“I had a BBQ Jackfruit sandwich,” Fleury said. “Very good. I work in the Delaware and Franklin counties. My plan stops here on the way by making a visit to my work plan. I will find something healthy. I think this will work for me. ”

Kim Freeman, who owns her own business, has supported her husband in many activities.

“When we had our posting job, I grabbed the website, social media,” he said. “I will be on top of everything coming out, picking up orders. We started in November, 2018 from the Food Court and ECDI.”

Freeman said her husband was the only person on the show. “Every day, he would take orders, process orders and send orders,” he said. “We will not use a third-party transport agent and we will not be here.”

Freeman said they began searching for a restaurant in July 2021.

“We thought we would be here two months ago,” he said. “(Customers) will be able to deliver food to the Draft Room. Here, we have 25 seats. We think we will have a much bigger picture.”

Freeman said they had a huge following on social media and dedicated customers.

He mentioned that Budda Bowl, jasmine rice, BBQ Jackfruit, black beans, sweet corn, Roman tomatoes, avocados and its Sriracha, have been known from the beginning.

“Our BLT has been named one of the best sandwiches in Columbus by the Columbus Monthly magazine,” he said. “It depends on who you ask what they want. We have salads, pastas and other new menu items like no crab cakes and vegan ribs, mac and cheese. “
