Garden State loves its food trucks, but the biggest hit of 2022 New Jersey food trucks is 3,000 miles away in California.

In the six episodes of the 15th season of the Food Network’s “Great Food Truck Race,” there are three young entrepreneurs from Morristown’s ESO Artisanal Pasta in the penultimate episode on Sunday among the last three groups hungry for the $ 50,000 grand prize.

“Right now, we’ve found a new life,” said Matt McFadden, AJ Sankofa with his lifelong friend and Kristin Gambarian Sankofa’s girlfriend in the ESO truck. “There was a bit of fatigue in the middle of [the season] because we were trying to figure out how to get over the humps. But when we finally started playing our thrill, it was exciting. We felt like we were on the trend. Up there.”

Competing for the latest ESO award is Maybe Cheese Born With It, a cheesecake-based group from Toledo, Ohio, led by drag queen Sugar Vermonte, and SENOREATA, a Cuban cuisine company against a Los Angeles hospitality company. The penultimate episode of “The Great Food Truck Race” will air on Sunday at 9 p.m. In the Food Network.

McFadden joined the company in January and “I’m on a plane to California in late February,” he said in an interview earlier this year. The “Great Food Truck Race” producers learned the story of ESO and invited Morris restaurant managers to compete, even though young high-end fresh pasta manufacturers and retailers have never used a food truck.

Sankofa created ESO in 2020, but the legal battle between COVID and its former partners temporarily shut down the young business a year later. The season began with nine teams serving custom trucks and several destinations to serve them. “We went in last,” McFadden said with a laugh. “AJ and I, we’ve all been snowboarding and other things, but not in the sand.”

He was careful not to leave a spoiler of what was to come, but McFadden said the ESO team struggled early on for the preparation time it meant to make fresh pasta every day.

“It was logistics for us,” he said. “Our food has been successful all along. We had to figure out how to open it quickly.”

Sales rose in section 5 after a decision was made to outsource fresh pasta to focus more on sales.

“We had other dishes,” he said. “Our Sicilian fried chicken was the biggest hit we had there. It was sold from the beginning.

“Some were good at selling,” Gambarian said of the competition. “We’re good at cooking. There were a lot of burgers, sausages, Chinese food, tacos. We were the ones who were cooking the restaurant food.”

The team survived a few tight calls before finishing second in Section 5, winning an appetizer and dessert challenges chosen by the guest judges.

“We’ve done well in sales and other areas, but the challenges have played a big role for us,” said McFadden, who worked on the culinary skills he worked at at Whole Foods in Morristown.

McFadden described the whole experience as “amazing” on set and outside and with other bands, some of them with colorful fashions in front of the cameras, bold expressions and competitive drama.

“We were friends with a lot of groups outside, and it’s sad to see them go when they were cut,” McFadden said. “Even though small rivalries arise, for the most part they are all very close.”

It was a different account on set and on camera.

“Most of the time, when most people see us on the show, we really hold on to ourselves,” McFadden said. “We try to figure out what we can do to improve. We don’t try to mix with other teams while competing. We try to outdo ourselves every time.”

Whatever the outcome, the national show is already helping to surpass previous ESO sales records by selling its products from a small shop window on Elm Street, but has been successful in restaurants in Morristown, such as South + Pine.

A food truck may or may not be part of their future, but they are currently busy preparing requests for national delivery.

“We have a high demand right now,” McFadden said. “There’s a lot of demand from out-of-state customers. We’re still making maps, but we’ll probably start shipping at the end of the show.”
